With Season 11 of Project QUILTING looming (first challenge goes up on Sunday, January 5th at noon, central time) it’s time for me to up my social media game. In the winter my favorite meal to cook is made-from-scratch soups. My favorites being chicken dumpling and also cream of mushroom. Along side it I will sometimes make home-baked bread or dinner rolls. I make chili quite often in the colder months as well, and like pairing that with white corn meal corn bread, served warm with Wisconsin/local pure maple syrup or honey.
During the warm seasons we grill out a lot. I love making marinated chicken kabobs or beef tenderloin on the grill, along side grilled, foil-wrapped sliced red potatoes from my brother-in-law’s potato field, with lots of butter, sweet bell peppers, onions, mushrooms and some of our favorite seasonings added to the mixture for taste: Jane’s Krazy Mixed Up Salt, Watkins Garlic Pepper Seasoning, Lawry’s Seasoning Salt, etc.
For something more “fun”, we will make homemade pizzas… I either make the crust from scratch or buy pre-made crusts (depending on time and if I have the energy, LOL), and we use my home-canned pizza sauce (if there’s any left in the pantry). Then top them with whatever toppings we want on them. This is such a good, tasty and fun meal for eating while watching a movie or something.

I don’t really care to cook. There are several things I’ve cooked so often that I’ve gotten really good at making them tasty. I can make a mean jambalaya. But baking….now that’s different. I love to bake. Love the smell of fresh baked bread….donuts….cookies….yum!

My favorite meal to cook is Toms Texas Chili 🌶 made in a crockpot!
3 cans chili beans
3 cans kidney beans
Don’t drain the beans
1 lb ground beef browned with 1 diced onion & one diced green pepper.
1 can of green chilies or if you are brave diced jalapeños
1 large can cream of mushroom soup
1 can (the soup can) water or beef broth
1 pkg of chili seasoning or your favorite brand of chili powder to taste
You can add a can of crushed tomatoes but we like it without!
1 chocolate Hershey bar added before serving and stirred in to melt
Serve over Fritos and topped with cheese & sour cream

For me, this time of year, it’s soup….a huge pot that lets me have several meals, some for the freezer for later (I have a lot of variety in the freezer so a different kind every night). I save leftover juice from roasts, boil up chicken bones for the juice and make great soups. Also have a very quick and easy recipe for Taco Soup that can be whipped together in less than half an hour. I do love cream soups (Minnesota Wild Rice Soup and Chicken Corn Chowder) but only have those once a season because of the calories and they don’t freeze.

My current (quick) favourite meal is to make tortillas a la me: I fry up onion, and any veg or leftovers. Add spices, then add beans/lentils or similar (depending what’s there). Heat through. Sometimes I add grated cheese and/or (pine)apple. Warm wraps, and serve to be assembled at the table. One of the few meals everyone in my house loves! I get glutenfree wraps for my son who has coeliac disease, and it’s vegetarian for my other son (though you can add meat if you prefer). And it’s quicker than writing it down here 😉

My favorite meal for a quilt day is Chalupa!
Brown 2 lbs. boneless pork ribs and throw them along with about 3 cups of the pan water in the crock pot.
Add: 4 cloves crushed garlic
1 diced onion
1 can black beans, rinsed/drained
2 T. chili powder
1 T. cumin
1 T. dried oregano
1 T salt
Allow to cook 5-6 hours until pork easily shreds with two forks.
Great meat for burritos, tacos, chimi-changas, quesadillas, Nachos, taco soup, etc.

Easy slow cooker meal — chicken pieces (we use boneless/skinless thighs and breasts) in slow cooker, top with some pats of butter/margarine, and sprinkle your favorite seasonings on top. Cover and let go. Easy peasy

I have a long list of favorites, but I think you are looking for easy meals to increase quilting time, so here’s one. Put 4 boneless chicken breasts, 1 can each of black beans and corn (both drained), some diced peppers and onions, and 1 jar of salsa (16 oz) in a crock pot and cook about 6 to 8 hours on low. I serve this over cooked rice with grated colby jack cheese sprinkled on top. Lots of time to sew while it cooks!
