With Season 11 of Project QUILTING looming (first challenge goes up on Sunday, January 5th at noon, central time) it’s time for me to up my social media game.  I would love this season to be even bigger and better than ever and that is done by increasing participation!  Please help me spread the word about this amazing quilting challenge!  Do you have friends you know that are in need of a creative boost?  Be sure to tell them about the fun of PQ!

      I don’t cook much any more since my husband loves to but when I do I make a huge pot of tomato sauce and make spaghetti.

    My favorite meal to cook is takeout! (And may or may not have happened a few times during some particularly intense weeks during PQ10!) But seriously, things that make a lot and are good leftover are always great in the winter – lasagna, minestrone, and chili are a few family favorites.

    My favorite meal during the cold months is a soup based meal – Such as Chili with tamales, tomatoe/celentro salad, tortillas, cheese and sour creme or Chicken soup with won tons.

    A big pot of minestrone soup, French bread and a very fresh green salad with crispy persimmons, pears, pecans and pomegranate seeds dressed with a light balsamic vinaigrette.

    I don’t like to spend too much time cooking so I often stir fry chicken and vegetables and add different sauces and rice or pasta to change it up.

    barbeque meatballs…..crockpot – frozen meatballs, fav barbeque sauce…..heat on low 4 hours – great over rice or as meatball sub with a green salad!

    I must admit, I like a well cooked egg… chips of onion and red peppers with a sprinkle of feta cheese after it is all cooked… well that is a favorite and Quick meal for me!

    In the winter my favorite meal to cook is made-from-scratch soups. My favorites being chicken dumpling and also cream of mushroom. Along side it I will sometimes make home-baked bread or dinner rolls. I make chili quite often in the colder months as well, and like pairing that with white corn meal corn bread, served warm with Wisconsin/local pure maple syrup or honey.
    During the warm seasons we grill out a lot. I love making marinated chicken kabobs or beef tenderloin on the grill, along side grilled, foil-wrapped sliced red potatoes from my brother-in-law’s potato field, with lots of butter, sweet bell peppers, onions, mushrooms and some of our favorite seasonings added to the mixture for taste: Jane’s Krazy Mixed Up Salt, Watkins Garlic Pepper Seasoning, Lawry’s Seasoning Salt, etc.
    For something more “fun”, we will make homemade pizzas… I either make the crust from scratch or buy pre-made crusts (depending on time and if I have the energy, LOL), and we use my home-canned pizza sauce (if there’s any left in the pantry). Then top them with whatever toppings we want on them. This is such a good, tasty and fun meal for eating while watching a movie or something.

    Sorry so lengthy… I love cooking, baking, canning… and this is a topic I really enjoy talking about!

    My favorite meal to cook is Christmas Dinner consisting of prime rib, mashed potatoes & gravy, roasted asparagus, and freshly made buns. It’s my favorite because it is a family gathering where everyone helps and everyone has fun.

    Chicken Scallopini from a recipe in the San Francisco Chronicle eons ago. I add lots of mushrooms and zucchini, and over rice it’s a complete meal.

    Well, I’m not a good cook and I live by myself, so it’s usually chicken noodle soup and toast! But my favorite growing up was my mom’s fried chicken! YUM – EEEEEEEEEEE

    I don’t really care to cook. There are several things I’ve cooked so often that I’ve gotten really good at making them tasty. I can make a mean jambalaya. But baking….now that’s different. I love to bake. Love the smell of fresh baked bread….donuts….cookies….yum!

    Homemade chicken soup made from a leftover roast chicken is my favorite to cook and my son’s favorite to eat. I always have quarts in the freezer for when we crave chicken soup, it’s easy to heat up.

    My favorite meal to cook is Toms Texas Chili 🌶 made in a crockpot!
    3 cans chili beans
    3 cans kidney beans
    Don’t drain the beans
    1 lb ground beef browned with 1 diced onion & one diced green pepper.
    1 can of green chilies or if you are brave diced jalapeños
    1 large can cream of mushroom soup
    1 can (the soup can) water or beef broth
    1 pkg of chili seasoning or your favorite brand of chili powder to taste
    You can add a can of crushed tomatoes but we like it without!
    1 chocolate Hershey bar added before serving and stirred in to melt
    Serve over Fritos and topped with cheese & sour cream
    Beer optional!

    My favorite meal to cook is in the slow cooker. Pork roast, beef roast, chicken, etc. basically anything I can put into the slow cooker and forget it. I really don’t enjoy cooking anymore!

    Soup or chili served over rice and garnished with cheddar cheese, diced onions, and fritos!! Both are simple to make–minimal pots/pans required and lots of leftovers that can be easily heated up in the microwave!

    Since I live alone and am doing the dirty lazy keto diet, my favorite meal is a pizza casserole.. I fix it in a 9 x 12 pan so I have about 8 meals. It’s yummy and keeps me on track.

    For me, this time of year, it’s soup….a huge pot that lets me have several meals, some for the freezer for later (I have a lot of variety in the freezer so a different kind every night). I save leftover juice from roasts, boil up chicken bones for the juice and make great soups. Also have a very quick and easy recipe for Taco Soup that can be whipped together in less than half an hour. I do love cream soups (Minnesota Wild Rice Soup and Chicken Corn Chowder) but only have those once a season because of the calories and they don’t freeze.

    Thanks for getting me thinking about this. I make mushroom enchiladas in a verde sauce that is delicious and really easy and is great when reheated. I should make them soon and freeze some.

    My current (quick) favourite meal is to make tortillas a la me: I fry up onion, and any veg or leftovers. Add spices, then add beans/lentils or similar (depending what’s there). Heat through. Sometimes I add grated cheese and/or (pine)apple. Warm wraps, and serve to be assembled at the table. One of the few meals everyone in my house loves! I get glutenfree wraps for my son who has coeliac disease, and it’s vegetarian for my other son (though you can add meat if you prefer). And it’s quicker than writing it down here 😉

    I can’t say it’s my favorite, but my granddaughter loves tater tot casserole. So that’s what we make at least once a week when she visits, I’m looking forward to Project Quilting!

    Apricot Chicken. Uses a packet of French Onion soup, apricot nectar and chicken drumsticks. Oven for an hour. Serve with rice. Yum.

    Don’t know if there is one favorite. Hubby & I like soups and salads so there are a ton of those I make. Also Meatloaf and Augratin potatoes, Pot of Pinto Beans and Tortilla’s with chili salsa, Or Chili. Chicken Stir Fry with Fried rice or Cauliflower rice. And I make Omelets almost every morning.

    In the winter, it is definitely chili and cornbread or tortellini soup. In the summer, a big ol’ salad with lots of fresh veggies!

    I have a lot of favorites (don’t know if they are my husband’s favorites, but, oh, well) so I will say Beef Stew. I made it last week and I just have to keep eating it with buttered bread. Thank you!

    Otherwise it is something quick or something that can be slow cooked.

    My favorite meal changes with the seasons. I do love to cook for others, and love to cook their favorites. Soups and stews in the winter. Salads and things on the grill in warm months. I am pleased that I have almost mastered a good Thai curry.

    I love making and eating chicken chickpea stew, with lots vegetables…real spoon food !! But I must admit when my grandkids come to eat, the want my homemade macaroni and cheese !!

    ANYTHING I CAN PUT IN A PAN AND FORGET and uses only what will go in the dishwasher when we are done…… lol!!!
    pork chops with mushroom soup… then quarter potatoes to add… let simmer…..

    My favorite meal, especially in winter, is soup-Minestrone, Broccoli Cheddar, Baked Potato or Chicken Noodle. Pair it with salami, crackers & cheese or a panini or grilled cheese. Comfort.

    My favorite meal for a quilt day is Chalupa!
    Brown 2 lbs. boneless pork ribs and throw them along with about 3 cups of the pan water in the crock pot.
    Add: 4 cloves crushed garlic
    1 diced onion
    1 can black beans, rinsed/drained
    2 T. chili powder
    1 T. cumin
    1 T. dried oregano
    1 T salt
    Allow to cook 5-6 hours until pork easily shreds with two forks.
    Great meat for burritos, tacos, chimi-changas, quesadillas, Nachos, taco soup, etc.

    I like to bread turkey cutlets with panko crumbs and fry them. Serve with a veg and salad (we are doing low carb so no potatoes- otherwise they would be there in some form!)

    My favorite meal to cook is a pot roast with carrots, red potatoes, and onions all at once and it is so moist. That was for dinner for breakfast I love to make dutch baby so simple and not as heavy as pancakes

    I like to make soup, mostly I make what my husband calls “fart soup” which is a variant of chicken soup, but it has a ton of kale, onions and white beans in it. 🙂

    Easy slow cooker meal — chicken pieces (we use boneless/skinless thighs and breasts) in slow cooker, top with some pats of butter/margarine, and sprinkle your favorite seasonings on top. Cover and let go. Easy peasy

    Green pizza….crust, pesto, spinach leaves, broccoli, red onion, green or black olives, black beans & sometimes corn
    Sprinkle a bit of feta or parmesan
    Yum yum!

    My favourite meal to cook is pasta. It is a fight free dinner and by that I mean kids eat it, clean their bowls and the limited clean up also makes them more cooperative!! Win win.

    I love cooking for my family. As an empty-nester it is such a treat to have them here when they all come home. I always make the foods of their childhood which are unavailable in other parts of the country: Norwegian meatballs, lefse, and all the fixings. It’s like Christmas!

    Sauté Shrimp in olive oil, garlic, sprinkle with Parmesan and squeeze lemon juice on top just as you remove it from the heat source. Serve w a green veggie-grilled asparagus, roasted broccoli perhaps.
    I don’t know what I call this meal but it’s super quick-like under 10 mins.

    I have a long list of favorites, but I think you are looking for easy meals to increase quilting time, so here’s one. Put 4 boneless chicken breasts, 1 can each of black beans and corn (both drained), some diced peppers and onions, and 1 jar of salsa (16 oz) in a crock pot and cook about 6 to 8 hours on low. I serve this over cooked rice with grated colby jack cheese sprinkled on top. Lots of time to sew while it cooks!
