Fondue Feast – the gift of being together

Sometimes the best gift for the holiday’s is a present of quality time.  What better way to spend some quality time together than a “Fondue Feast.”  This year for my daughter’s 12th birthday we had a few of her friends over and fed them a TON of fondue!  This post will include supplies you should have, some great recipes for three courses of fondue and of course some fun “action” photos.

I used my bullet journal and fun pens to do just that.

Be sure to purchase a fondue pot that you like prior to the big meal date.  My family got me this fondue pot for my birthday.  Just be sure to double check that the plug in cord is the one that fits your pot before the day of your big meal!  For whatever reason, the first one they sent us was wrong but they quickly sent us the right cord.  If you’re going to have a big group don’t hesitate to get some extra fondue forks.

I put together a menu for a Cheese course, a Meat and Dip Course, and the final course – Chocolate!

The Cheese Fondue Course

We went with the Classic Cheese Fondue … #condimentcrew eating fondue

Classic Cheese Fondue

1/3 lb. firm Gruyere Cheese
1/3 lb. Fontina
1/3 lb Gouda
2 T Cornstarch
1 cup Sauvignon Blanc wine
1 garlic clove, minced
1 T fresh lemon juice
1 T brandy
1 tsp Dijon mustard
1/8 tsp nutmeg

Instructions

1. Grate all of the cheeses.  In a bowl, combine the cheese with the cornstarch, tossing thoroughly to coat all pieces.

2. In a fondue pot, bring the wine, garlic, and lemon juice to a simmer over medium-low heat.  Add the cheeses to the simmering liquid a little at a time, stirring well between each cheese addition to ensure a smooth fondue.  Once smooth, stir in the brandy, mustard, and nutmeg.

Dippers for Cheese

  • bread, an assortment of baguettes, sourdough, and other hearty breads cut into cubed pieces
  • Apples (Lapacek’s apples of course)
  • carrots
  • broccoli
  • cauliflower
  • pretzel bitesCheese Fondue Course

The Meat Fondue Course

The next course is Meat.  I personally love the Mojo style broth from the Melting Pot and I found an imitation recipe for that online.

Mojo Style

5 1/4 cup broth (vegetable or chicken stock)
1/4 cup orange juice
1/4 cup fresh cilantro, chopped
2 tsp. ground cumin
2 T jerk seasoning (Mrs. Dash Caribbean Citrus Seasoning)
2 T black pepper, cracked
2 T lime juice
1 T minced garlic

Put all of these in the fondue pot and heat until really hot and ready to cook the meat in.Fondue Meat Course

Dippers for the Meat

  • Chicken
  • Steak
  • Shrimp
  • Cubed Potatoes
  • Broccoli
  • Carrots
  • Mushrooms

And the best part of the main course is all the fun dips for things! I would half all of these recipes … there was a LOT even though we had 8 people eating.  I would also recommend dividing these into a couple of ramekins to be spread out amongst the table for easy access to all.

Gorgonzola Port Sauce

*my favorite in the mushrooms!

1/2 cup mayo
1/2 cup sour cream
2 oz. Gorgonzola cheese
1/8 tsp salt
1/2 tsp ground black pepper
1 tsp chopped garlic
1/4 oz. port wine
1/2 oz. milk

Curry Dip

3/4 c mayo
1 T lemon juice
2 tsp curry powder
1/8 tsp ground ginger

Steak Sauce

– this was the overall favorite of the group

1/2 cup ketchup
2 T Worcestershire sauce
1/2 tsp garlic salt

Chik-fil-a sauce

1/4 c. mayo
2 T honey
1 T yellow mustard
2 tsp Dijon mustard
2 tsp lemon juice
2 T BBQ Sauce

The Chocolate Fondue Course

Once the meat was gobbled up … it was time for the majority of the groups favorite course (I personally like the cheese course the best) – the chocolate!

Flaming Turtle

12 oz milk chocolate, chopped
2 tsp heavy cream
1/4 cup caramel ice cream topping
1 T Rum
3 T Pecans choppedFruit and Marshamallow Chocolate Fondue Dippers

Chocolate Dippers

  • Marshmallows
  • Pound Cake
  • Strawberries
  • Pineapples
  • Cherries
  • Bananas
  • Rice Krispies
  • Brownies
  • Angel Food Cake – didn’t really workCake and Treat Fondue Dippers

If people at the table are not full at this point … I don’t now what to tell you.  I’m pretty sure we all couldn’t move for about an hour after we finished eating. It was delicious – but boy – so much food!  Lots of laughs, fun, and memories were made and most importantly, the kids all had a fabulous time.The #condimentcrew fondue feast
