How many times have you seen a picture of an amazing looking recipe on Facebook or Pinterest?
How many times have you actually made it and it turns out just like the picture?
Well … most of the time mine do not look like the picture, or not as easy as the author makes it sound, or something else goes wrong … This time though … it worked!
I saw the picture for Lemon Crinkle Cookies on facebook and knew I had to give it a try. Here is the recipe…
1 box Lemon Cake Mix
1 regular size container of Cool Whip, thawed
½ to 1 cup powdered sugar
***I added the zest of one lemon and the juice from one lemon (be sure not to let the seeds fall in the mixture) just to make it slightly more lemon-y
In a large bowl, combine cake mix, egg, and Cool Whip. The batter will be sticky! Form dough into tablespoon-fulls and roll in powdered sugar. Bake for 8 to 10 minutes in hot 350 oven until the edges are golden. Allow to cool 1 minute on baking sheet; then remove to wire rack to cool completely.
It’s always best to make cookies with a helper – preferably and adorable one! We decided that Capri would be the spoonful-er.
And because I’m one of those folks that have a hard time following the recipe … I decided to try the same thing with a dark chocolate cake mix. I followed the same recipe above except instead of adding the lemon zest I added some dark chocolate chips. These also turned out soft and delicious – definitely on my husband’s new list of favorites!
