I found this recipe in the Weight Watchers Quick Fixes booklet. I tweeked it a bit so I could use different ingredients that I already had but it was still quite tasty (you have to get past the fact that they have different texture than the pancakes you’re used to but once you do…yummm) Silver Dollar Oatmeal Pancakes 1 egg (the recipe calls for 2 egg whites, but I just used an entire egg) 1 package of instant oatmeal…any flavor (I used Cinammon Roll…it was delicious) or 1 cup hot oatmeal 2 T. low-calorie pancake syrup Spray small nonstick griddle with nonstick spray; heat. Add eggs to dry oatmeal; mix well. Drop by tablespoonsful 2″ apart onto hot griddle. Cook until browned on bottom; turn to brown other side. Remove to plate; serve with pancake syrup. With full egg…5 pts, with egg whites 4 pts. I thought it was quite tasty and it combines two foods that really keep me full…oatmeal and eggs!
